What article directories are actually good to submit to for SEO and for getting visitors to a site?

That's a good question. I thought directories were basically a thing of the past.

It seems like social media sites (including different types like Pinterest and such) are the "go to" places to list things these days.

I used Article Directories before for my blogs, but it took a great deal of commitment and interacting with others to see any good result. In the end, I gave up because it took a huge chunk of time out of my daily activities that it was not worth it. And I had used EnzineArticles before, so was my friends! We folded after a few months!

This is not an article directory, but there is an active "social network" called Medium. It is all about articles writing.
