This simply proves that Google's AI is reading through our e-mails. A blatant display of disrespect to our privacy.

I don't know if what she said is true. But ever since she said it, I've always assumed that "Somebody" was spying on me and violating my privacy. If you approach the violator about the matter, they'll either (1) deny it and say that you're paranoid OR (2) they'll admit it, say they won't do it again, and keep doing it anyway! It's the world we live in.

I don't know for sure, but I doubt that there is a away to stop Google from reading your content, when you use their services. The most straight forward option might be to use a different email provider, eg one of the ones mentioned earlier who offer email privacy such as https://protonmail.com/
Different people have different views on the privacy of their data. Personally I use Gmail a lot and I accept the fact that Google have access to that content.
