If they are a reliable company and know what they are doing, your website should get moved, without any downtime for your users and visitors. You will also need to update the nameservers on your domain, to ensure everything goes smoothly, again the host you are moving to should be able to provide you with details on exactly what you need to do and when you need to do it.

My way! I get new host, create staging site, move content while leaving the old site intact. Move all files and demo my new site. If everything if set right from permalinks, I switch. Good thing I usually use cloudflare DNS and don't have to worry.
