My way! I get new host, create staging site, move content while leaving the old site intact. Move all files and demo my new site. If everything if set right from permalinks, I switch. I have not yet had the experience of moving a site from one web hosting service provider to the next.
However, I am aware that prohoster.info intervenes to ensure that such switchover is seamless.
