Weekly meal plans are an excellent idea. They make cooking dinner each night less stressful as well as potentially saving you money. I can't eat a lot of the foods in your menu (different diet needs) but I do something similar.

Having a meal plan also helps you save and as well create a fixed budget for yourself.

We mostly have light dinner or we skip dinner so we save money with this at times and I feel its good to skip dinner

I am now making a weekly meal plan every Sunday, it is so much easier for me, i check what I have at home and what else i need to buy to my meals, it helps me to save money and stop wasting what i have.

A neighbor often gives we roommates tons of day-old bread. We place the day-old bread in the freezer. We then prepare Crock-Pot French Toast with the day-old bread as a good way to consume and not waste!

Mix in a bowl:

eggs
milk
cinnamon
vanilla extract

Tear day-old bread in pieces and place in Crock-Pot until almost full.

Pour mixture over bread.

Cook on HIGH for 4 hours.

Butter and syrup to your liking.

That sounds like what my grandmother would have called bread and butter pudding rather than French toast (since it's not toasted).

Although its good to have a weekly plan as it will save you money and time and you don't need to think daily about the meals but for a single person its hard

Even the meals listed there have become very expensive these days. I can't afford to even buy fruits anymore.
