We decided on fast food tonight. Since my hubby works at Wendys he can go in and get his meal free so he just paid for me. They got a deal on the spicy chicken combos so I got that. I also uploaded my receipt to Caddle which got me a quick 50 cents for cash back too :D

I'm defrosting some chicken thighs, which I'll be marinating ready for roasting and having with some mixed roast veggies. I may even have a CarbSmart frozen yoghurt for dessert :)

Roast chicken with lots of veg .. haha my granddaughter will hate that! She's the only person I know that doesn't like roast potatoes. :lol:

Tonight, we'll be having roast. It was meant for Sunday dinner, but our schedule got turned around a bit this weekend, so I threw it in the freezer. My husband usually gets home earlier on Tuesdays, so I figured tonight would be a good night for it.

I'm making some chicken strips in a tomatoey Italian sauce to have with rice. But I'll be having mine with some egg fried cauli-rice with peas :)

I am not yet sure what we're having for dinner. We didn't really eat a balanced diet this past weekend because we went to a convention and packed our lunches, but were kind of low on the vegetables. I think we need something healthier and nutrient dense today, but I've also got some leftovers in the fridge that need to be used up.

All of the kids are on a school break this week and the stepkids arrive here tomorrow (and will be staying until Sunday), so I'm kind of torn between just using up what's in the fridge so I can restock, or making something new.

One easy "use things up in the fridge" option is soup, but I think folks are tired of me making soup. In fact, homemade chicken soup is one of the things that needs to be used up in the fridge!

EDITED TO ADD: Change of plans! The stepkids are coming over tonight instead of tomorrow due to flooding in their area. I learned this while in the grocery store and in my panic, decided we are having tacos/nachos/burritos tonight for dinner. I found some marked down ground beef while there, so I don't have to worry about not having anything thawed.

I'm seriously considering making some low carb tortillas for myself with a green side salad. But I've never made tortillas before, so that makes me a little nervous. My husband has a ready-made pizza waiting.

Cool. I'll be curious to hear how these turned out. I haven't tried making my own yet either. What are you using as ingredients?

I have used the store bought low carb tortillas, and they were decent. I should have picked up more this week, but I decided to give low carb extra fiber bread a try. It's really not bad.

We will probably have leftovers for dinner tonight.

Today my son decided what is the dinner (and I say thanks because sometimes I am completly out of ideas about what should I cook), so I will cook beans with rice, grilled meat and salted vegetables.

Let me know how that goes! I have never done that myself. I either purchase lower carb tortillas or use lettuce leaves as a wrap... I've also used collard or kale leaves as wraps.

What ingredients are you using?

We had pizza. We tried a new restaurant that we haven't visited before. It was quite good. I had a few slices of pepperoni pizza, and I really liked it. :3

I haven't updated on the last two dinners --

Wednesday night, we had "cheeseburger fries"... which was a base of French fries topped with browned ground beef and shredded cheese, and then everyone added whatever cheeseburger toppings they liked (shredded lettuce, chopped tomato, chopped dill pickles, ketchup, mustard, crumbled bacon). It was almost like a salad with ground beef and potatoes. I knew some kids would skimp on the veggies, so I pulled out some carrot sticks too.

Thursday night, we had "breakfast for dinner", which wasn't quite as balanced as I'd like. I made 2 batches of pancakes, but still only had just a little over 2 pancakes per person. :cry: Made some bacon in the oven, put orange juice on the table, and set out some homemade strawberry and blueberry syrups that I had made the other day. I also found a partial package of Potatoes O'Brien in the freezer, so I made that too. I was really feeling the lack of veggies later, so I also sauteed a bag of spinach and some onion in oil.

I think I am going to have leftover stuffed shells. It is warm so I was thinking about a BLT but I have a lot of this dish leftover. I will no doubt be eating it many times!

My boyfriend works all evening shifts this week so 3pm-12am (2am) depending on how bad the restaurant is. I do have left over mac n cheese in the fridge but I know it won't taste great heated back up but at the same time I don't want to cook so I guess it sort of is a no win situation for me lol. Depending on my mood I might make some rice for myself since I am eating alone tonight.

I have fresh veggies on hand, so I can make a nice salad. I think I'm going to broil some chicken breast to toss in too. I'll save a piece for my daughter but she had a late lunch, so she will probably just have a snack later. My husband will be home late, so he'll probably just grab something on the road.
