Lunch----i had beetroot salad with rice.

I had a delicious salad - lettuce, cherry tomatoes, cucumber, mussels in Picante sauce into which I tossed a few blueberries - I love the contrast in taste between sweet and savoury. To complete the salad, I added a medium soft boiled egg and seasoned with salt and pepper - no dressing this time.

I had a little pasta tuna salad left over from last night's dinner and because I was very hungry, I added some musssels in tomato sauce to it and it worked very well. I treated myself to a handful of blueberries as well.
