I feel the key is to focus on quality, and affordability at the same time. This does not mean you have to sell underpriced though.

Most small businesses do better focusing on quality and service, because competing on price alone is hard when bigger players can undercut you. Just choose what fits your customers.

Increases quality means price increase

When you sell quality, your cost price will be higher and you will have to sell for higher prices, and should focus on niche audience. Selling for low prices means you are selling in volume.

This is where target Audience comes into play, who are your target audience? This would determine which one to focus on.
